A tropical twist on a classic margarita featuring caramelized pineapple shrub, silver tequila, Cointreau, Amaretto, and a splash of pineapple and lime juices for a refreshing and flavorful cocktail.
Ingredients
- 2 oz silver tequila
- 1 oz Cointreau or triple sec
- 0.50 oz Amaretto
- 4 oz caramelized pineapple shrub
- 1 to 2 oz pineapple juice
- 1.50 oz fresh lime juice
- Splash of club soda or seltzer water (optional)
- Kosher salt (for rimming the glass, optional)
Instructions
- In a large pot, caramelize the sugar, vanilla, and ginger until it turns an amber color.
- Add the diced pineapple and stir until the sugar dissolves completely.
- Pour in the water and simmer until the pineapple looks deflated.
- Add the white wine vinegar, then let the mixture stand for at least 2 hours or refrigerate overnight after straining it through a sieve.
- In a cocktail shaker, combine tequila, Cointreau, Amaretto, pineapple shrub, pineapple juice, and lime juice with ice. Shake well.
- Strain the mixture into glasses rimmed with kosher salt and filled with ice.
- Add a splash of club soda if desired and garnish with a lime wheel or pineapple slice.
