Ingredients

  • 2 oz silver tequila
  • 1 oz Cointreau or triple sec
  • 0.50 oz Amaretto
  • 4 oz caramelized pineapple shrub
  • 1 to 2 oz pineapple juice
  • 1.50 oz fresh lime juice
  • Splash of club soda or seltzer water (optional)
  • Kosher salt (for rimming the glass, optional)

Instructions

  1. In a large pot, caramelize the sugar, vanilla, and ginger until it turns an amber color.
  2. Add the diced pineapple and stir until the sugar dissolves completely.
  3. Pour in the water and simmer until the pineapple looks deflated.
  4. Add the white wine vinegar, then let the mixture stand for at least 2 hours or refrigerate overnight after straining it through a sieve.
  5. In a cocktail shaker, combine tequila, Cointreau, Amaretto, pineapple shrub, pineapple juice, and lime juice with ice. Shake well.
  6. Strain the mixture into glasses rimmed with kosher salt and filled with ice.
  7. Add a splash of club soda if desired and garnish with a lime wheel or pineapple slice.
