Ingredients

  • 1 cup calamansi juice (or 3/4 cup lemon juice and 1/4 cup orange juice)
  • 1 cup sugar
  • 1/3 cup water
  • 2 oz club soda
  • 1 oz gin
  • Candied lime or lemon for garnish

Instructions

  1. In a small saucepan over medium-low heat, simmer calamansi juice (or lemon juice and orange juice), sugar, and water for 5 minutes, stirring occasionally.
  2. Remove the syrup from the heat and let it cool. Then, transfer it to a lidded jar and refrigerate until chilled, about 30 minutes or up to 1 week.
  3. Fill a low-ball glass with ice.
  4. Add 2 ounces of the prepared calamansi syrup, club soda, and gin. Stir gently to combine.
