Ingredients
- 1/4 cup brown sugar
- 2 teaspoons water
- 1 1/2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon cider vinegar
- 3 tablespoons heavy cream, divided
- 1/2 teaspoon rum extract
- One 12-ounce bottle cream soda
Instructions
- In a small saucepan, mix the brown sugar and water over medium heat. Boil gently until the mixture reaches 240 F on a candy thermometer, stirring frequently.
- Add the butter, salt, vinegar, and 1/4 cup of heavy cream to the saucepan. Let it cool to room temperature.
- Once cooled, stir in the rum extract.
- In a medium bowl, combine 2 tablespoons of the brown sugar mixture with the remaining 3 tablespoons of heavy cream. Use an electric mixer to beat until slightly thickened, approximately 2 to 3 minutes.
- To serve, distribute the brown sugar mixture evenly into 1 tall glass (about 1/4 cup per glass). Pour 1/4 cup of cream soda into each glass and stir gently. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.
