Ingredients

  • 2 tablespoons baking stevia or sugar
  • 1/2 cup water
  • 1/2 cup frozen blueberries
  • 1 1/2 ounces white rum
  • Handful of mint leaves
  • 1/2 cup sparkling water, such as La Croix
  • Ice

Instructions

  1. In a small-medium saucepan, combine baking stevia, 1/2 cup water, and frozen blueberries. Bring to a boil, then simmer for 10 minutes, mashing the blueberries as they cook.
  2. Transfer the cooked blueberry mixture to a blender and puree until smooth. Allow it to cool or place it in the freezer for 10-15 minutes to chill.
  3. When ready to serve, place a few mint leaves and 1 1/2 ounces of rum in a highball glass with ice.
  4. Add 2 ounces of the blueberry simple syrup to the glass.
  5. Top with sparkling water and serve immediately.
  6. Garnish with mint and extra blueberries, if desired.
