Ingredients
- 2 tablespoons baking stevia or sugar
- 1/2 cup water
- 1/2 cup frozen blueberries
- 1 1/2 ounces white rum
- Handful of mint leaves
- 1/2 cup sparkling water, such as La Croix
- Ice
Instructions
- In a small-medium saucepan, combine baking stevia, 1/2 cup water, and frozen blueberries. Bring to a boil, then simmer for 10 minutes, mashing the blueberries as they cook.
- Transfer the cooked blueberry mixture to a blender and puree until smooth. Allow it to cool or place it in the freezer for 10-15 minutes to chill.
- When ready to serve, place a few mint leaves and 1 1/2 ounces of rum in a highball glass with ice.
- Add 2 ounces of the blueberry simple syrup to the glass.
- Top with sparkling water and serve immediately.
- Garnish with mint and extra blueberries, if desired.
