Ingredients
- 2 tablespoons sugar
- 1/2 cup water
- 1/2 cup frozen blueberries
- 1 1/2 oz white rum
- Handful of fresh mint leaves
- 1/2 cup sparkling water
Instructions
- In a medium saucepan, combine sugar, water, and frozen blueberries. Bring to a boil, then simmer for 10 minutes, mashing the blueberries as they cook down.
- Transfer the mixture to a blender and puree until smooth. Let it cool or place in the freezer for 10-15 minutes to chill, without freezing.
- In a highball glass filled with ice, add a few mint leaves and pour in the rum.
- Pour 2 ounces of the blueberry simple syrup into the glass.
- Top off with sparkling water and serve immediately, garnished with mint and extra blueberries if desired.
