Ingredients

  • 2 tablespoons sugar
  • 1/2 cup water
  • 1/2 cup frozen blueberries
  • 1 1/2 oz white rum
  • Handful of fresh mint leaves
  • 1/2 cup sparkling water

Instructions

  1. In a medium saucepan, combine sugar, water, and frozen blueberries. Bring to a boil, then simmer for 10 minutes, mashing the blueberries as they cook down.
  2. Transfer the mixture to a blender and puree until smooth. Let it cool or place in the freezer for 10-15 minutes to chill, without freezing.
  3. In a highball glass filled with ice, add a few mint leaves and pour in the rum.
  4. Pour 2 ounces of the blueberry simple syrup into the glass.
  5. Top off with sparkling water and serve immediately, garnished with mint and extra blueberries if desired.
