Ingredients

  • 1/2 cup water
  • 1/2 cup granulated sugar
  • 1 cup fresh blueberries (can also use defrosted frozen blueberries)
  • 5 oz Prosecco or other sparkling wine

Instructions

  1. In a medium saucepan, combine water and granulated sugar, bringing the mixture to a boil and stirring until the sugar dissolves. Let the mixture cool.
  2. Pour 1/3 cup of the simple syrup into a blender, then add the blueberries and puree until smooth.
  3. Place a fine-mesh strainer over a bowl and pour the blueberry mixture into the strainer. Gently press the blueberry mixture through the strainer using a rubber spatula, discarding the seeds left in the strainer.
  4. Spoon the blueberry puree into a champagne flute, adding fresh blueberries to the glass. Fill the glass with chilled Prosecco or sparkling wine. Gently stir and serve.
