Ingredients

  • 1/4 cup blackberries
  • 2 tbsp sugar
  • 2 tbsp water
  • Ice, as desired
  • Fresh blackberries, as desired
  • 4 oz Prosecco
  • 1 1/4 oz Pimm's No. 1

Instructions

  1. In a small pot over medium heat, combine the blackberries, sugar, and water.
  2. Bring to a boil, then let it simmer for 5 minutes.
  3. Strain the syrup through a sieve and refrigerate for at least 1 hour or until completely chilled.
  4. Half-fill a large wine glass with ice and a few fresh blackberries.
  5. Pour the chilled blackberry syrup over the ice and blackberries.
  6. Add the Prosecco and Pimm's No. 1 to the glass.
  7. Stir gently with a spoon.
