Ingredients
- 1 1/2 cups water
- 3/4 cup granulated sugar
- 3-inch long piece fresh ginger, peeled, thinly sliced
- 1 lemon, zested and juiced
- Pinch of sea salt
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 3 oz dark rum
- Approximately 6 oz ice cubes
- Handful of fresh mint leaves
Instructions
- In a medium saucepan, combine water, sugar, ginger, lemon zest, lemon juice, and salt. Bring to a boil, then simmer for 5 minutes until the syrup thickens slightly and is infused with ginger and lemon. Set the syrup aside to cool, then strain it into a bowl and discard the solids. The syrup can be refrigerated for up to 1 week.
- In a blender, combine the berries, rum, and 1/2 cup of ginger syrup; blend on high speed for 15 seconds until well blended.
- Fill a highball glass halfway with ice. Pour the berry mixture, add the mint, and stir well to allow some ice to melt into the mixture. Serve immediately.
