Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 2 sprigs fresh rosemary
  • 1 strip of lemon zest (about 1-inch wide)
  • 1 very ripe pear
  • Dash of lemon juice
  • 1 oz pear vodka
  • 1 oz unflavored vodka
  • 2 tablespoons pear puree
  • 2 tablespoons rosemary syrup
  • 2 tablespoons prosecco or sparkling wine
  • Ice
  • Rosemary sprig for garnish

Instructions

  1. In a small saucepan, combine granulated sugar and water over medium-high heat, stirring until the sugar dissolves and the mixture simmers.
  2. Remove from heat, add the rosemary, and let it steep for 30 minutes.
  3. Remove the rosemary and let the mixture cool completely.
  4. Peel, core, and chop the pear, then blend it with a splash of lemon juice until smooth.
  5. Transfer the pear puree to a small bowl.
  6. In a cocktail shaker filled with ice, combine pear vodka, unflavored vodka, pear puree, and rosemary syrup. Shake well until the shaker is cold to the touch.
  7. Strain the mixture into a large martini glass.
  8. Top with prosecco to taste and garnish with a fresh rosemary sprig.
