Ingredients
- 1/4 cup granulated sugar
- 1/4 cup water
- 2 sprigs fresh rosemary
- 1 strip of lemon zest (about 1-inch wide)
- 1 very ripe pear
- Dash of lemon juice
- 1 oz pear vodka
- 1 oz unflavored vodka
- 2 tablespoons pear puree
- 2 tablespoons rosemary syrup
- 2 tablespoons prosecco or sparkling wine
- Ice
- Rosemary sprig for garnish
Instructions
- In a small saucepan, combine granulated sugar and water over medium-high heat, stirring until the sugar dissolves and the mixture simmers.
- Remove from heat, add the rosemary, and let it steep for 30 minutes.
- Remove the rosemary and let the mixture cool completely.
- Peel, core, and chop the pear, then blend it with a splash of lemon juice until smooth.
- Transfer the pear puree to a small bowl.
- In a cocktail shaker filled with ice, combine pear vodka, unflavored vodka, pear puree, and rosemary syrup. Shake well until the shaker is cold to the touch.
- Strain the mixture into a large martini glass.
- Top with prosecco to taste and garnish with a fresh rosemary sprig.
