Ingredients

  • 2 oz caramelized pumpkin puree
  • 1/2 oz maple syrup
  • 1/2 oz extra virgin olive oil
  • 1/2 tsp ground cinnamon, plus extra for garnish
  • 1/4 tsp freshly grated nutmeg
  • 1 sage leaf, plus extra for garnish
  • 2 tsp granulated sugar
  • 3 oz vodka
  • Juice of 1/4 lemon
  • 1 egg white
  • Ice

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the pumpkin, maple syrup, olive oil, cinnamon, nutmeg, and sage in a roasting pan lined with parchment paper.
  3. Roast for 45 minutes until caramelized and tender, then set aside to cool.
  4. Transfer the roasted pumpkin mixture to a food processor and blend until smooth.
  5. In a small saucepan, dissolve granulated sugar in water over medium heat, then cool completely.
  6. Combine the pumpkin puree, vodka, and sugar syrup, and chill for at least 2 hours to infuse.
  7. Strain the mixture through a sieve lined with muslin or cheesecloth, being careful not to push the puree through.
  8. Discard any solids and set aside.
  9. In a cocktail shaker filled with ice, combine the infused vodka mixture, lemon juice, and egg white.
  10. Shake well, then strain into a cocktail glass.
  11. Repeat for additional servings.
  12. Garnish with a sprinkle of cinnamon and a sage leaf.
