Ingredients

  • 2 oz Gin (Traditional or London Dry)
  • 2 oz Aperol
  • 1.50 oz Lemon juice
  • 1 oz Maple syrup
  • 1 Egg white (large, free range)
  • 4 sprigs of Rosemary

Instructions

  1. Lightly clap 2 rosemary sprigs in the palm of your hand to release the oils and aroma.
  2. Place the 2 rosemary sprigs into a cocktail shaker, and add the gin, Aperol, lemon juice, maple syrup, and egg white.
  3. Secure the lid and shake vigorously for 30 seconds without ice.
  4. Add ice to the shaker and shake again for 30-40 seconds.
  5. Strain the mixture into a glass and garnish with the remaining rosemary sprigs.
