- 3 oz Cava
- 1.50 oz Vodka
- 2.50 oz Lemon Sorbet
- 2.50 oz Apple Juice
- 1/4 tsp Lecithin Powder

- Prepare the serving glass by placing it in the freezer for half an hour to create an icy appearance.
- In a bowl, mix the apple juice and lecithin powder using a hand blender to create a layer of foam, ensuring a portion of the blender extends above the liquid to incorporate air.
- In a separate mixing bowl, blend the Cava, vodka, and lemon sorbet using a hand blender to create the cocktail mixture.
- If necessary, use a long spoon to scoop the cocktail into the prepared glass, leaving about 1cm of space from the top.
