Ingredients

  • 3 oz Cava
  • 1.50 oz Vodka
  • 2.50 oz Lemon Sorbet
  • 2.50 oz Apple Juice
  • 1/4 tsp Lecithin Powder

Instructions

  1. Prepare the serving glass by placing it in the freezer for half an hour to create an icy appearance.
  2. In a bowl, mix the apple juice and lecithin powder using a hand blender to create a layer of foam, ensuring a portion of the blender extends above the liquid to incorporate air.
  3. In a separate mixing bowl, blend the Cava, vodka, and lemon sorbet using a hand blender to create the cocktail mixture.
  4. If necessary, use a long spoon to scoop the cocktail into the prepared glass, leaving about 1cm of space from the top.
  5. Gently spoon the apple juice foam on top of the cocktail to create a beautiful, high foam peak or garnish with a mint leaf.
