Ingredients
- 1 large egg white
- 1 oz. Angostura bitters
- 1 oz. fresh lime juice
- 1/2 oz. heavy cream
- 1/4 oz. grenadine (such as Luxardo)
- 1/4 oz. simple syrup (1:1)
- About 3 oz. chilled seltzer
- Pineapple wedge (for serving)
Instructions
- In a cocktail shaker, combine the large egg white, Angostura bitters, fresh lime juice, heavy cream, grenadine, and simple syrup.
- Shake the mixture without ice to emulsify the egg white for about 15 seconds.
- Add ice to the shaker and shake until the exterior is chilled, approximately 15 seconds.
- Strain the contents into an empty collins glass.
- Top the glass with about 3 oz. of chilled seltzer, tilting the glass at an angle.
- Garnish the cocktail with a fresh pineapple wedge straddling the rim of the glass.
