Ingredients

  • 1 large egg white
  • 1 oz. Angostura bitters
  • 1 oz. fresh lime juice
  • 1/2 oz. heavy cream
  • 1/4 oz. grenadine (such as Luxardo)
  • 1/4 oz. simple syrup (1:1)
  • About 3 oz. chilled seltzer
  • Pineapple wedge (for serving)

Instructions

  1. In a cocktail shaker, combine the large egg white, Angostura bitters, fresh lime juice, heavy cream, grenadine, and simple syrup.
  2. Shake the mixture without ice to emulsify the egg white for about 15 seconds.
  3. Add ice to the shaker and shake until the exterior is chilled, approximately 15 seconds.
  4. Strain the contents into an empty collins glass.
  5. Top the glass with about 3 oz. of chilled seltzer, tilting the glass at an angle.
  6. Garnish the cocktail with a fresh pineapple wedge straddling the rim of the glass.
