Ingredients

  • 1 egg white
  • 1 lemon peel
  • 1 orange peel
  • 2 oz. amaretto (such as Caffo)
  • 1 oz. fresh lemon juice
  • Angostura bitters (for serving)
  • Cocktail cherry for garnish (optional)

Instructions

  1. In a large cocktail shaker, combine the egg white, lemon peel, orange peel, amaretto, and fresh lemon juice.
  2. Seal the shaker and shake vigorously without ice for 30 seconds to emulsify the egg white.
  3. Unseal the shaker, add ice, and shake vigorously again until the shaker is well chilled.
  4. Strain the mixture into a stemmed coupe glass.
  5. Dot the froth with Angostura bitters using a dropper.
  6. Garnish with a cocktail cherry on a pick, if desired.
